For a city as water-bound as Istanbul, it should come as no surprise that fish is a dietary staple. Fish is everywhere, and the fish sandwich (or balik ekmek), sold prominently off of boats equipped with fryers and grills docked under the shadows of the Galata Bridge, is the most beautiful piscatorial street-food offering: bread, grilled fish filet, onions, lemon juice and salt.
